It depends on how you’re using them. Stereotypes and slurs used to incite hatred toward individuals or groups of people based on their affiliation with one of the protected groups listed here would violate YouTube’s Community Guidelines.
For example: A video focusing on a stereotype that immigrants are bad drivers is okay, but it wouldn’t be if it also claimed that immigrants are less intelligent than non-immigrants.
